We recently switched from using a Vista client for our KMS server to a
Windows 2008 server. KMS is setup, and the appropriate DNS SRV records have
been updated. Unfortunately it doesn't appear to have actually licensed any
of the clients yet.

Key Management Service is enabled on this machine
Current count: 3
Listening on Port: XXXX
DNS publishing disabled
KMS priority: Normal

Key Management Service cumulative requests received from clients
Total requests received: 113
Failed requests received: 0
Requests with License Status Unlicensed: 0
Requests with License Status Licensed: 0
Requests with License Status Initial grace period: 113
Requests with License Status License expired or Hardware out of
tolerance: 0

Requests with License Status Non-genuine grace period: 0
Requests with License Status Notification: 0

Not sure why after receiving 113 requests it has a current count of 3, and 0
for 'Status Licensed'.

If anyone can provide some guidance on this I would greatly appreciate it.

Hello Roland,
open an elevated cmd prompt and run

C:\Windows\system32\slmgr -dlv

Do this on your KMS host machine as well as a couple of the KMS client
machines.
What is the output? I removed the data from some of the lines. What is
the output of the rest of them
THe KMS Machine name entry was removed, but you need to verify that the
client machines are pointing to the correct KMS host machine.

The clients are pointed to the correct KMS server, I'm just curious why the
numbers vary so much. This is where we are currently:

Hello,
Those are requests from clients that the KMS host machine cannot service.
Beta clients for example
Clients the KMS Host key is not valid for(KMS, KMS_A or KMS_B keys. KMS_C
would be all of them)
Timestamps of client machine requests that not close to the KMS Host
machine time.
