When you add the Hyper-V role to a full Windows 2008 installation, the
wizard prompts you to select which network interface to use. I
generally use one interface for the host and management, and a second
for the vms.

How do I make the same configuration change in Windows 2008 core
installations?

When you create the networks, you'll be using the same Hyper-V Manager,
except it will be running on a separate machine. In that, you can designate
which one to use. In the Actions pane, you'll see the Virtual Network
Manager.

As Charlie states you would proceed through the Virtual Network Manager
inside the Hyper-V Manager console.
When installing Hyper-V unattended on both a full installation or Server
Core installation of Windows Server 2008, no network configuration is done.
(Like not checking any network card during Hyper-V role installation.)
After installation, you would connect using the HV Manager console and
configure your virtual network (switches).
