I think it'd be ok to set up the two sql 2005 versions on the same
machine? From what I've read here, the only one of the two different versions of the management tool should be installed though? |

Yes, you can install SQL Server 2005 instances (different editions) side by
side and the Client Tools will be installed only once. I didn't exactly understand what you mean by saying "two different version of SSMS" however, you can not install SSMS and SSMSE side by side.
