Probably because you used design mode, clicked insert table and
selected the option to have a header.

By default an html header in a table ( uses the th tag ) text is
centred and bold.

If you are happy with code view change the <th>s to <td>s

Probably because you have "Header row' selected so DW is creating TH cells
rather than TR.
