First of all I am new to apache and its configuration. I would like to
know how I can configure my web server to automatically archive the
log files and what are the options that I can use?

apache is distributed with a sample log rotation script, rotatelogs:

and other options for log archiving are discussed in this bit of documentation:

you might be interested in using cronolog:
