web page statistics..

I was wondering about what statistics on web pages that are served by
the apache server can be gathered.

I need to know which workstation has browsed which pages and how long
each page was viewed for.

Can this be done?

What other stats can I gather?

Sure, as long as you save the IP (or the name) of the 'client host' in
your log file. I suggest you have a look a some log analyzer like
analog, awstats or webalizer.
