Par défaut relatively simple/secure formmail script recommendation?

Greetings good AWW folk,

A non-profit I volunteer for is in need of very simple form submission
via email to a fixed address, and a contact form to go to that same
email address.

The site is cpanel hosted. There's a rewrite of formmail.cgi that the
host's supoprt folks suggested using, but I had to cringe when I saw
the target address specified as a hidden form field.

What are folks using for these? Anything out there that's well vetted
and considered rather secure, and has some reasonable measures to
prevent the form from being more of a nuissance than a ? Or has
php or _insert_hot_language_of_the_now_ evolved to a point where I can
drop in a few lines of code into an existing html form and voila, life
is simple?

Thanks for any pointers! Google has been of limited separating
the wheat from the chaff on this issue.

Best Regards,
