First you have to buy a retail copy of the version of Vista you are
running in the VM, then you can change to the new product key via the
control panel / system. This is on a normal version of Vista, I'm not
sure about the eval version, it may not let you do that, and in that
case, you'll have to install Vista fresh from the copy you bought
above.
